My Grandma Meatballs (Polpette)

 

We all have a favorite recipe, one that reminds us of a particular moment... whether it is sweet or savory. But there is a recipe that is almost universally loved, especially by children: meatballs with tomato sauce, the most nostalgic dish of them all.

Ingredients for the Meatballs - Aprox 14 tiny polpette

  • 1 Lb Ground Beef - 80%

  • 1 Egg

  • 1/3 cup Bread Crumbs

  • 1/4 cup Milk

  • 1 tsp Parsley

  • Oregano - Pinch

  • 1 1/2 tbsp Parmigiano Reggiano

  • 1 1/2 tbsp Pecorino Romano

  • Nutmeg - Pinch

  • Salt and pepper to taste

Ingredients for the Tomato Sauce

  • 14oz Tomato Puree (I like Mutti or Pomi)

  • 1 Shallots

  • 1 Garlic clove

  • Salt and pepper to taste

Directions

1.Put meat into a large mixing bowl. Add parsley, bread crumbs, eggs, milk, oregano, nutmeg, salt and pepper. Use your hands to mix the ingredients.

2.Add the Pecorino and Parmigiano Reggiano. Season with salt and freshly ground black pepper.

3.Shape meatballs by hand. Cook the meatballs. Once they are cooked about 10 minutes put the meatballs aside

Tomato Sauce

1.Chopped shallot and set aside. Cook the shallots not the same pan, add garlic and cook it for 5 to 7 minutes until translucent. Add Tomato puree and cook slowly for 30/40 minutes. Then add the meatballs and cook for 5 minutes.
